Beulah’s Delights
This recipe has been passed down through several generations and is always a hit when shared…

- 1/2 cup butter
- 1 cup sugar
- 1 1/2 cup chopped dates
- 1 egg, slightly beaten
- 1 tsp vanilla
- 4 cups Rice Krispies
- 1/2 cup chopped walnuts
- 1 bag flaked coconut
Directions:
- Put Rice Krispies and walnuts in large bowl
- Fill one bowl of coconut and one bowl of ice water for each person rolling (see notes below)
- Put butter, sugar, dates, and egg in medium sauce pan
- Heat on med-low stirring constantly
- Bring to a boil, let boil 5 minutes, still stirring constantly
- Remove from heat and stir in vanilla
- Pour date mixture over Rice Krispies and walnuts, mix well
- Dip your hands in ice water then scoop and roll a tablespoon full of cookie mix into a ball
- Roll cookie in coconut and place on plate
Notes: you need to move quickly as the coconut will not stick if the mix gets too cool – we usually use 2 people to roll a single batch – you can make several batches at once just add at least one extra roller for each batch – if the mix gets too cool you can put it in a plastic bowl and warm it in the microwave, just be very careful as it tends to get hot spots
